Ingredients  

  • 1 tri-tip roast (2-3 pounds)
  • 2 tablespoons kosher salt
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika. Optional Santa Maria style: substitute the paprika for 1/2 teaspoon dried oregano and a pinch of cayenne
